Breakfast Drop Cookies Recipe


Breakfast Drop Cookies Recipe

Ingredients:

3/4 c of raisins
3/4 c of carrots; grated
1/2 tsp of salt
1 tsp of cinnamon
2 tsps of baking powder
1/2 c of flour (whole wheat)
1 c of flour (all purpose)
1 tsp of vanilla
1/4 c of oil (vegetable)
1/3 c of sugar (brown); packed
1 whole egg
3/4 c of milk
1 c of cereal (100%PRCTG% bran)

Instructions:

Mix together bran flakes and milk. Set it aside for ten minutes. Whisk the eggs, vanilla, oil then sugar. In a separate bowl, mix together both types of flour, baking powder, salt and cinnamon. Fold in raisins and carrots. Mix the bran mixture with the flour mixture ’till soft and moist consistency.

With an ice cream scooper, scoop out mixture and place on a baking tray that has been greased. Bake for fifteen minutes 400 degrees F ’till tops are springy when pressed in the center. Set aside to cool. Makes two dozen.

Irish Breakfast Scones Recipe

Ingredients:

1.5 c of pastry flour (whole wheat)
1/3 c of flour (wholemeal)
2 Tbsp of syrup (corn)
3/4 c of bran (wheat)
2 Tbsp of margarine (soy)
1 tsp of baking powder
1 c of soy or potato milk

Instructions:

Mix the non-wet ingredients then drop margarine; mix them well. Then add syrup as well as sufficient milk, creating dough that is somewhat loose. Knead on floured surface ’til smooth. Then roll into square 3/4″ thick. Slice dough to halves, then quarters, then eights.

Flour cookie sheet lightly. Bake dough on it for twenty minutes in oven 400 degrees F. Allow to be cooled on rack. Serve accompanied with fruit.

Breakfast Scones Recipe

Ingredients:

2 c of flour
2 pcs of eggs; beaten
1 tsp of salt
2 Tbsps of sugar
2 Tbsps of margarine or butter
Water (cold)
3 tsps of baking powder

Instructions:

Pre-sift flour and measure; sift together with the salt, sugar as well as baking powder. First add the butter to the flour mixture using the hands, then put in the eggs as well as adequate cold water in order to create a dough (soft). Spread unto board that is sprinkled with flour then put into cookie sheet (1″ thick).

Slice dough into circles/squares then fold to double; drizzle milk. Put on lightly greased cookie sheet. Sprinkle sugar then bake 450 degrees Fahrenheit for 15 mins. Makes 8 scones.
