Bauernfruhstuck (Farmers Breakfast) Recipe
Ingredients:
4 medium potatoes
3 large eggs
1/2 tsp of salt
2 medium tomatoes; peeled
3 Tbsps of milk
4 bacon strips; cut into cubes
1 c of cooked ham; cut into small cubes
1 Tbsp of chopped chives
Ingredients:
Boil potatoes, unpeeled, for 30 mins. Rinse when done, peel , then set them aside in order to completely cool. Evenly slice boiled potatoes. Fry bacon slices in pan ’til transparent in color. Add in potatoes and cook ’til lightly browned.
Separately blend milk, salt and eggs. Stir ham in. Slice tomatoes to thin-wedge cuts and combine into egg mix, then pour everything over potatoes and bacons in frying pan. Cook ’til eggs set. Top w/ chives before serving.
